    Wood fired brick ovens are hot, up to 800°F. Home ovens can barely reach half that.

    To make a really great pizza you need high temperatures. The best traditional pizzerias use wood fired brick ovens or special electric ovens that can reach blistering high temperatures. Pizza crust gets crunchy on the outside, but it doesn't have the time to dry out on the inside.

    Home ovens max out at around 450°F (220°C), and they take forever to reach that temperature, especially if you use pizza stones. Even then the results are never really that great
